It's pretty much the same as on windows. I'll be posting intel mac stuff soon. You will need Plogue Bidule and a DTS encoder; vortex surround encoder For live monitoring you'll need an audio device with at least 6 outputs. I recommend the gigaport-hd and either a home theater receiver with 6 spam inputs or a creative DTS-610 to encode your live monitored channels to DTS in real time. Those are no longer made but there are still a few available on e-bay, etc. To playback DTS encoded files you can use VLC, via the 6 channel spam out, or if your MAC has a optical out (or you have an airport express) you can use iTunes. I can post more details (and a working SPEC version for OSX) in the coming days. Go ahead and read the guides, watch the videos, and see if this looks like something you want to dive into.
